Tasting Notes

2004 Chardonnay This is a deliciously textured crisp, bone-dry wine. It displays fresh honeydew melon/nectarine aromas on the nose; the palate is quite rich with some mineral overtones and the wine finishes long – oak and wine are seamlessly integrated as a result of the 100% barrel fermentation.

This wine underwent full malolactic fermentation during its 10 months in new and one-year-old Vosges oak barriques from the Siruge cooperage in Burgundy. This is undoubtedly an excellent food wine (particularly with seafood) – and for those who enjoy older wines it will continue to develop in the bottle for 3-5 years.
2003 Merlot A wine which smells of fresh raspberries with a hint of spice – a fragrant and fresh bouquet resulting from ripe and healthy grapes harvested at vintage. Aged for 20 months in French oak barrels, it has a fruity flavoursome mid-palate with a long aftertaste of elegant tannins and well balanced acidity. This wine will continue to develop further complexity and soften for a few years yet (for those who can resist its current charms!).
2004 Pinot NoirThis wine has a lovely bouquet of dark cherry with a hint of ‘forest floor’ – the complex earthy/gamey aroma often found in good Pinots. The palate is seductively rich and velvety with a clean long finish – a beautifully balanced wine which, although young, is drinking nicely right now. This wine is made from low-cropped vines with an average age of 23 years and was matured in French Allier barriques (one third new) for 12 months. It has the structure to develop further complexity for up to five years; however for those who enjoy the freshness of youth, why wait!

2002 Cabernet Sauvignon Following two great vintage years, 2002 was a return to a more typical Yarra summer which suited Cabernet as a result of a fine and mild April. The nose displays delicate aromas of blackcurrant together with some minty/cedar overtones complimented by judicious use of oak. The mid-palate exhibits some lovely berry sweetness and the wine finishes elegantly long with finely textured tannins. Made from fruit from 30 year old vines and aged for 20 months in Bordeaux barriques (40% new), this mid-weight wine displays a well balanced structure that suggests it will age well and, in line with good Cabernets generally, will develop further complexity and softness as the elements of the wine come together over the next 4-6 years.

2003 Cabernet Merlot Made from the classic Bordeaux varieties, this is a fresh, clean style of wine which displays aromas of soft red berries and cedar on the nose with a pleasant supple palate and a smooth tannin finish. The marriage of Cabernet Sauvignon (providing both structure and length) and Merlot (boosting mid palate fruit) works well – resulting in an easy drinking style of wine which will hold-up well over the next few years or so.

2004 Shiraz This wine is made from hand-picked Heathcote fruit which was processed in our winery. The resultant wine is both rich and powerful – a nose reminiscent of blackberry and vanilla with juicy brambly fruit on the palate together with a hint of liquorish followed by a long soft tannin finish. Matured for 14 months in predominantly new American oak, this is a full flavoured, well structured wine – indeed particularly elegant considering its youth – however there is no doubt it will age gracefully for many years to come.
2004 Rose A ‘summer wine’ made from Pinot Noir (just two days skin contact) and barrel fermented to dryness. Ideally served chilled this wine smells of strawberries with a hint of musk and is an ideal accompaniment with cold meat salads, or perhaps barbecued Salmon steaks. Drink now!
