All wines (except for our Shiraz) are made from grapes grown on our property – we pick by hand and the wines are made and bottled by us in the winery complex behind the tasting room. As all of our wines are practically unfiltered (we only use a very light filter as part of the bottling line) they may throw a harmless crust upon cellaring.

We utilise traditional French winemaking techniques throughout our winemaking production processes and we use only the highest quality oak barrels; additionally we aim to minimise the use of chemical additives to the wines we make. Winemaker Roger Morgan completed all academic requirements of the Wine Science Degree Course at Charles Sturt University in 1997.

2005 Chardonnay
This is a deliciously textured crisp, bone-dry wine. It displays fresh citrus aromas on the nose; the palate is quite rich with layers of complexity as a result of the wild yeast fermentation experienced with this vintage and the wine finishes long – oak and wine are seamlessly integrated as a result of the 100% barrel fermentation during its 10 months in new and one-year-old Vosges oak barriques from Nuits St George in Burgundy. This is undoubtedly an excellent food wine (particularly with seafood) – with the potential to develop in the bottle for 3-5 years. Bottle price - $24.

2004 Merlot
A wine which smells of fresh loganberries with a hint of fruit-cake – a fragrant and fresh bouquet resulting from ripe and healthy grapes harvested at vintage. Aged for 20 months in French oak barrels, it has a rich fruity flavoursome mid-palate with a long aftertaste of elegant tannins and well balanced acidity. This wine will continue to develop further complexity and soften for a few years yet (for those who can resist its current charms!). Bottle price - $25.

2005 Pinot Noir
This wine has a delicate bouquet of dark cherry with a hint of “forest floor” – the complex earthy/gamey aroma often found in good Pinots. Slightly lighter in colour than previous years the palate is quite 'Burgundian' - velvety with a clean long finish – a well balanced wine which, although young, is drinking nicely right now. This wine is made from low-cropped vines with an average age of 23 years and was matured in French Allier barriques (one third new) for 18 months. It has the structure to develop further complexity for up to five years; however for those who enjoy the vibrancy of youth, why wait! Bottle price - $28.

2004 Cabernet Sauvignon
The nose displays powerful aromas of blackcurrant together with some earthy overtones complemented by judicious use of oak. The mid-palate exhibits some rich berry sweetness and the wine finishes elegantly long with finely textured tannins. Made of fruit from 35 year old vines and aged for 20 months in Bordeaux barriques (40% new), this richly flavoured wine has a well balanced structure that suggests it will age well and, in line with good Cabernets generally, will develop further complexity and softness as the elements of the wine come together over the next 4-6 years. Bottle price - $25.

2003 Cabernet Merlot
Made from the classic Bordeaux varieties, this is a fresh, clean style of wine which displays aromas of soft red berries and cedar on the nose with a pleasant supple palate and a smooth tannin finish. The marriage of Cabernet Sauvignon (providing both structure and length) and Merlot (boosting mid palate fruit) works well – resulting in an easy drinking style of wine which will hold-up well over the next few years or so. Bottle price - $20.

2004 Shiraz
This wine is made from hand-picked Heathcote fruit which was processed in our winery. The resultant wine is both rich and powerful – a nose reminiscent of blackberry and vanilla with juicy brambly fruit on the palate together with a hint of liquorish followed by a long soft tannin finish. Matured for 14 months in predominantly new American oak, this is a full flavoured, well structured wine – indeed particularly elegant considering its youth – however there is no doubt it will age gracefully for many years to come. Bottle price - $28.

2005 Rose
A 'summer wine' made from Cabernet and Merlot (just two hours skin contact) and barrel fermented to dryness. Ideally served chilled this wine smells of plumb pudding spices with a hint of 'bubble-gum' and is an ideal accompaniment with al fresco dining, or perhaps barbecued Salmon steaks. Drink now! Bottle price - $16.
